On the move

I thought I would give you a little slide show of Luke walking - another make-your-own-flip-book. I know it's possible to post movies and I would if I knew how, but . . . this is all you get for now.

But first I wanted to also say how much Luke is eating. He must be going through a growth spurt or maybe making up the weight he lost last week. Tonight he ate a whole plate full of chicken, pasta, green beans, cheese, and grape jello. Last night he ate a huge piece of salmon. I was surprised how much he liked it, but I guess when you make it with teriyaki (which is sweet) anything tastes yummy. I'll post the recipe at the end because I know OddMix likes recipes like this - EASY & VERSATILE.

Here's Luke walking outside this afternoon. Halfway through I had to zoom out because he was too close, but if you look at the truck in the background you can see how far he came.

Cute, huh? He definitely favors his right leg and puts most of his weight on it. Makes his gait look kind of stilted and gimpy yet, but he'll get the hang of it.

OK, here's the recipe (& I think I posted it before but I can't remember when so instead of wasting time searching for the link I'll retype it):

Teriyaki

1/2 cup soy sauce
1/2 cup sugar or 1 cup brown sugar
10 cloves garlic, pressed
7-10 squirts ginger
for overnight marinade add 1/2 cup water
unused portions can be stored in the refrigerator

This is Alec's dad's recipe. Here are a few tips I use:
* I've never made it with regular sugar - why bother?
* a "squirt" of ginger happens when you put a piece of fresh ginger in your garlic press and squeeze - a one-inch piece will make 7-10 squirts
* the garlic & ginger in a jar are just as good, but you may need to monkey with it to figure out how much to use
* I always add the 1/2 cup water - it seems to strong if I don't
* I usually make a double batch in an old glass mayo jar
* this can be frozen - it doesn't freeze solid because of all the sugar - it just pours slowly like molasses
* I've used this with fish, chicken, & pork

Some suggestions for how to use it:
* add a tablespoon of cornstarch to make a thicker sauce with stir-fry veggies & chicken or pork
* put a nice piece of salmon in a ziploc bag and cover with sauce - only needs about 5-10 minutes to marinade - pan fry

Time for Grandma to print off some new pictures --he looks so grown up now and in some of the pictures he really looks thinner. What a doll.

I am going to have to steal this recipe. Well, maybe just borrow - but you can't really return an idea. Hmmm. Accept might me the word, since you offerred it. Wow, that was a tangent.
